Liz's Favorite Pumpkin Cookies
- 14 1/2 oz. can pumpkin
- 2 eggs
- 2 cups granulated sugar
- 1 cup vegetable oil
- 2 tsp milk
- 2 tsp vanilla
- 1 tsp salt
- 2 tsp baking soda
- 2 tsp cinnamon
- 4 tsp baking powder
- 4 cups flour
- 12 oz. chocolate chips
- Preheat oven to 375F.
- In a large bowl, combine pumpkin, eggs, sugar, oil, milk, vanilla.
- Add salt, baking soda, cinnamon.
- In separate bowl, blend flour and baking powder.
- Add flour mixture to pumpkin mixture and stir until well combined. Add chocolate chips.
- On ungreased cookie sheet, using 2 teaspoons, make small dollops of mixture. (Cookies do not bake larger; they bake
to the size you make the dollop) Bake for 10 to 15 minutes.
- Cook on wire rack. Makes about 4 dozen cookies.
